We’re down at my mother-in-law’s for the long holiday weekend, and her big, bright kitchen inspired me to finally do some cooking.

Making Caprese Pasta Salad ~

Caprese Pasta Salad 2 ~

Not sure if it’s pregnancy or the weather but I’ve been craving a tangy pasta salad, specifically one with all the flavors of summer. I combined my love of Caprese Salad with pasta into this tasty dish. It’s super easy and quick and can sit out for a decent amount of time, so it’s great for when you have a buffet at your bbq.

Happy Memorial Day everyone!

Caprese Pasta Salad
Serves 6
A quick and easy pasta salad, full of the flavors of summer!
Write a review
  1. 1 lb farfalle pasta, dried (or any shape you prefer)
  2. 1/3 cup extra virgin olive oil
  3. 1/3 cup balsamic vinegar
  4. 3-4 cloves garlic, minced plus 1-2 Tbsp olive oil
  5. 5-6 medium tomatoes (this really depends how much tomato you like), diced with half of the juives removed
  6. 2 handfuls fresh basil, chopped
  7. 16 oz. fresh mozzarella, diced
  8. 1 tsp salt (plus more to taste) and pepper
  1. Cook pasta according to directions until al dente. Drain and rinse with cold water, then put in large bowl. Put empty pot back on stove top.
  2. In a small bowl, mix vinegar and oil plus salt and pepper.
  3. In the empty pot, add a couple Tablespoons of olive oil and add garlic. Saute a min until fragrant and lightly brown. Remove immediately and add to olive oil mixture.
  4. Add chopped tomatoes, basil and mozzarella to bowl of pasta.
  5. Add in oil/vinegar mixture and toss well.

    • Hehe, thanks, Kelly! Nate’s mom lives in PA and yes, she has two adorable golden retrievers…one of whom is 15 yrs old if you can believe it! If you make this recipe, add more garlic…I think it definitely could have used it but it was tasty otherwise :)

  12. That’s a fabulous pasta salad. Happy belated Memorial Day! You look wonderful and it looks like the pregnancy is going really well. When I was nursing in maternity, we had two cases where a teenage girl had become pregnant and managed to keep it a secret from her parents until going into labour. All while living at home. I’ve never understood how it’s possible to hide a pregnancy! xx

    • Thanks, Charlie! I can’t imagine people staying so small that they’re able to hide a pregnancy. That’s so crazy! There’s a show on cable here called “i didn’t know i was pregnant” which is even more unbelievable- the women themselves didn’t know they were pregnant until they went into labor. Can you believe that?!

  17. Gosh I’d love to be in a big, bright kitchen like that for a day. We are moving to a house down the street that has a slightly bigger kitchen, and I can’t wait–for the additional space but also just starting out clean and uncluttered again!

    • SO weird to think i’m over halfway! I think next week begins the 3rd trimester. Hehe, yeah I’m glad I’ve managed to only gain weight in my stomach…so far. It’s kind of fun because I can totally indulge in some things I wouldn’t have eaten before and it doesn’t make me get fat ;) I feel good right now, but am starting to feel big- hard to get up from sitting and turn over in bed.     • Mmm, me too :) I can’t stand biting into raw garlic so I thought the sauteeing would help a bit. Next time I think I would add more garlic tho!

  31. caprese all the things!! i missed you, and now you pop out of hiding with your wee baby bump and you make me one of my favorite summer things! you’re wonderful, and so is caprese salad. this is totally on my list under “summer vacation food” because everyone in florida will love this.
