It was such a nice day out today in NY. Warm but breezy. It makes my walk home so nice.

I’m trying to savor these warm, dry days before we get to the so-humid-you-stick-to-your-pants days. Unfortunately, we did have a couple of those in the last two weeks. All I want on days like those is something cold.

Ice cream is totally a possibility for dinner on those days. At least for me. But since I have a husband to feed who can’t subsist on dessert alone, I have to come up with other things.

We had some whole wheat rolls lying around from veggie burgers on Memorial day, and since you know I can’t let things go to waste, i had to come up with some use for them.

I thought chicken salad would be great, but to kick it up a notch, I added the most delicious sauce on the planet- Frank’s Buffalo Sauce. I seriously could eat that sauce every day on anything.

I had a hard time coming up with what I should call this, because when I did a google search for “Buffalo Chicken Salad,” all I could find was buffalo chicken pieces ON a salad….which totally makes sense although I hadn’t thought of that at all. I wish I could like emphasize that “chicken salad” is one phrase. Oh, I know…”Buffalo” Chicken Salad.

That was totally my thought process, by the way. I literally came up with that as I was typing. Now you probably understand why Nate has learned to completely tune me out when I talk, since for me talking actually means voicing my every thought.

Oh well, I guess it’s worth putting up for if you get this for dinner :)

“Buffalo” Chicken Salad Sandwiches

Print this recipe!

Makes about 6 sandwiches

1 2/3 lbs chicken breast, raw (I guess the same amount cooked if you have leftovers? prob a little less pre-cooked)
4 ribs celery, chopped (about 1 cup)
2 Tbsp lemon juice
6 oz. 2% Greek Yogurt
1/2 cup blue cheese crumbles
1/2 cup buffalo sauce
salt and pepper to taste
6 hamburger buns
Romaine lettuce for garnish (optional)

Put chicken in a pot and cover with cold water. Bring to a boil and heat until chicken is cooked through. I find the easiest way to tell is to take a piece out and cut into it.

Pull chicken out and set on cutting board to cool.

Meanwhile, chop celery. Whisk lemon juice, yogurt, blue cheese, buffalo sauce and s/p. Dump in celery.

When chicken has cooled, chop into small bite-sized pieces and mix with the sauce. Put in fridge to cool.

Top each bun with a lettuce leaf and a large scoop of chicken salad.

  2. Sometimes I have to apologize, and say “I just needed to talk it out”… that will only cover so much though. Also, I am going to picture your face on that old lady every time I see those Frank’s hot sauce commercials from now on.

    • Haha, I def don’t apologize…Nate knew what he was getting into before he married me. Now he’s stuck. Hehe, glad I’m not the only one who does it tho!

  3. I love the heat but not the humidity. I hate it when you walk around with your clothes sticking to you. And you go through so many drinks! I love the look of these rolls and the blue cheese would add wonderful flavour and I love how you served them with a side of chips – who could resist a lunch like this! xx

    • Yes, heat without humidity isn’t too bad…but that’s rare during summers on the east coast of the U.S. I know, sticky clothes are the WORST. Thanks, Charlie :)

  4. Frank’s Buffalo: GIRL, HIGH FIVES! that is the only buffalo sauce i use, and it’s the best. I hate sticking to my pants in the summer; we had that day yesterday here, and i thought fleetingly that i may be sick of summer already. thankfully the vacation is coming up, which means i just have to get through a few more weeks. perhaps these awesome sandwiches will help; i love what you did here! i make chicken salad all the time, and i like the hot sauce addition.
    for the record, i never love it that i don’t live with you. :)

    • Hahaha. Shannon, I actually didn’t know there was another brand of buffalo sauce. I thought it was kind of like Band-aids…there’s like only one brand you can buy. Where are you going for vacation?? So jealous…i want to go somewhere. Haha, we’d prob make good roommates ;)

  6. I am so ready to bite into that sandwich, Amy! I remember when I first discovered Frank’s and I was like “omg, it’s buffalo wings!” I used to just douse chicken wings with the stuff and then pop it into the oven to bake. I totally need to copy this sandwich idea.
    I’m so with you on not wasting anything. And like you, I also pretty much need to express every thought in my head to my husband as though I’m committing some crime if I leave something out or unsaid. I think he tries but there’s just no way he can absorb/follow more than half of what I’m saying… : )

    • I know, like you don’t even need the actual wings when you have Frank’s! Which is why you should totally find other vehicles for this delicious sauce :) Haha, it seems we woman all seem to vocalize our every thought!

  8. This looks AMAZING. I agree, Frank’s is pretty much the greatest thing to happen to the world since Jesus. Maybe I’m exaggerating just a little bit, but it’s pretty darn good! I went to college in upstate New York, and as a result I adore all things Buffalo sauced. Can’t wait to try this recipe tonight.

  9. Ahhh this sounds amazing. I’m such a sucker for buffalo sauce and bleu cheese. Strangely enough I’ve only ever made strange buffalo-inspired things like the breaded broccoli I posted a few months ago, but I’ve never done a classic chicken recipe! Should definitely try this one.

    • Buffalo sauce is just great…and aren’t you supposed to eat spicy things when the weather’s hot because sweating helps cool you down? So go for it ;) and YES, we should totally meet up! I’ll shoot you an email :)

  18. I put Frank’s buffalo sauce on too many things, too! This chicken salad looks so good and I would prefer it over the salads with buffalo chicken pieces on top :)
